We have a printer running nanoDLP on a raspberry pi with a static IP address that we use to connect over the internet. However, we want to be able to make that IP address dynamic to interact more easily with a local network we want to move the printer on to. Any idea how to do that? (I'm a total beginner with this software on raspberry pi so start from square one).

Check out file called /etc/dhcpcd.conf
There loads of tutorial on how it should configured.

How do I access that file? By closing the nanoDLP software and searching for it on the pi?

No need to close nanodlp, even it is ok to do so. But you can SSH into device and do it.
